Cheese-Filled Pesach Blintzes

Cooking Time:

For the blintzes:

5 eggs
1 cup sugar
1 cup matzah meal
½ cup potato flour
Lemon zest
2 cups orange juice
2 cups water

For the filling:
500 grams Tnuva Creamy Soft Cheese 5%
½ cup sugar
100 grams raisins

Toppings:
Powdered sugar
Melted dark chocolate, still hot

  1. Add the blintz ingredients in the order they are written into a mixing bowl and mix. If the mixture is too dense, add a little more water.
  2. In a separate bowl, mix the filling ingredients together and set aside.
  3. Heat up a skillet, add a little oil/butter and ladle some of the blintz batter onto the skillet. Fry on both side until each side is lightly browned, then place on a towel.
  4. Add a tbs. of the filling onto each blintz and roll into a cylinder. Sprinkle with powdered sugar and/or the hot melted dark chocolate. Serve warm.
