Personal Jam-Filled Cheesecake

Crust:
2 cups cookies or graham crackers, finely ground
1/2 package (3.5 oz) Tnuva Butter, melted

Filling
1 package (8.8 oz) Tnuva Quark Creamy Soft Cheese 9%
1/2 cup (125 g) Tnuva Original Cheese Spread
3 eggs
Grated rind of one lemon
1/2 cup sugar
2 tablespoons cornstarch
1/2 cup fruit jam

 

1. Preheat oven to 300 degrees and prepare your pan by lining a cupcake tray with paper liners
2. Prepare the crust: In a food processor or a bowl, mix graham cracker crumbs with melted butter, and mix until well combined. Place a tablespoon of the mixture in each paper liner and press firmly down to create a well-packed crust (you can use a cup to assist.) Freeze the tray for fifteen minutes.
3. Prepare the filling: In a large bowl, combine all ingredients except for the jam, and whisk until smooth.
4. Fill each cupcake liner with the batter until it is ¾ of the way full.
5. In a separate bowl, stir the jam well with a whisk or spoon. Distributing evenly, drizzle the jam on each prepared cake, and create swirls with a toothpick.
6. Bake for 18-20 minutes until the cakes are firm.
7. Cool and refrigerate until ready to serve.
