Red Onion Quiche With Goat’s Cheese & Kashkaval

Ingredients:
½  package (9 oz.) Tnuva Short Dough For Savory Pastries, gently thawed according to manufacturer's instructions
4 tablespoons olive oil
1/2 cup balsamic vinegar
1/4 cup demerara sugar
4 red onions, peeled and halved
2 eggs
1/2 cup heavy cream
Salt and black pepper
5 oz. Tnuva Kashkaval cheese, roughly chopped
1 package (7 oz) Tnuva Goat Cheese, sliced into 1/4 inch thick slices
three springs of fresh thyme, stems removed

Instructions:

1. Preheat oven to 350 degrees. Line a 9 inch cake pan with baking paper.

2. Prepare the onions: In a medium bowl, combine olive oil, balsamic vinegar and sugar. Add the onions and stir gently to coat well. Arrange on a baking tray, cut side down, and bake for 20 minutes. Remove the onions from the oven and cool well.

3. Prepare the crust: In a pie pan with a removable bottom, line the bottom and sides with Tnuva dough. Trim any excess dough around the edges, weight with beans or rice, and blind bake for 10 minutes. Carefully removed the beans or weights, and continue baking for 4 more minutes, until the ends are lightly browned. Remove from oven, and leave the oven on. 

4.  Prepare the filling: Beat eggs with cream and season with salt and pepper.

5.  Sprinkle the grated kashkaval on top of the baked crust, top with onions (cut side up) and goat cheese slices. Sprinkle with thyme leaves and pour the cream mixture in.

6. Bake for about 45 minutes, until golden brown and set. Remove from the oven and wait at least 15 minutes before slicing.
