Ultimate Israeli Sandwich

The Nine Days are fast approaching.
Your temporary vegetarian diet doesn’t have to be bland and tasteless. There are many simple, delicious recipes that don’t involve any meat. Try this colorful Israeli sandwich that highlights mild, nutty Edam cheese and fresh crunchy vegetables. It takes only a few minutes to make, and your family will love it!

Prep time: 10 min

Serves: 6 sandwiches

Ingredients:
6 tbsp Tnuva unsalted butter, room temperature
12 thick slices whole grain bread
6 slices Tnuva Edam sliced cheese (full fat or light variety)
2 cups spring mix greens or the leafy green veggies of your choice
1 fresh cucumber, thinly sliced
½ cup thinly sliced radishes
Chopped scallions, optional

Preparation:
1. Spread butter on one side of each slice of bread
2. Top with cheese, greens, cucumber, radish and scallions if desired
3. Wrap in parchment or plastic wrap for picnic or lunch
4. Serve at room temperature
