Pumpkin Feta Pastry
Yield: 8 servings
Prep Time: 1 hour
Level: Medium
Ingredients:
Crust:
- 1/2 package Tnuva Maadanot Frozen Rolled Short Dough for Savory Pastries
Filling:
- 2 tablespoons olive oil
- 2 cups diced pumpkin
- 2 teaspoon sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground chili peppers
- 1 package Tnuva Crumbled Feta
- 1 teaspoon each salt & freshly ground pepper
- 1 package Tnuva Edam Cheese Slices, cut into small pieces
- 1/2 container Tnuva Premium Cheese Spread, Original Flavor
- 2 tablespoons green onion, chopped
Topping:
- 3 tablespoons olive oil
- 2 teaspoons za’atar seasoning
- 1/2 teaspoon ground chili peppers
Instructions
- Thaw the dough according to package directions. Preheat oven to 350°F. Line a baking sheet with parchment paper.
- Heat the olive oil in a frying pan over medium heat. Add the pumpkin and sprinkle the sugar and cinnamon on top. Stir. Add the ground chili and stir fry for about 6 minutes until the pumpkin is soft. Remove from the fire and let cool.
- Transfer the pumpkin to a bowl and add the rest of the filling ingredients. Mix well.
- Open up the dough on a floured surface so that you have a 12″ square. Spread the filling over the dough, leaving about an inch all around without filling.
- Roll up the dough jelly-roll style, and then curl into a spiral. Transfer to the baking pan. Brush with olive oil, and then sprinkle with za’atar and chili. Bake for about 30 minutes or until nicely browned.
