Servings:
Preparation Time: 20 minutes
Cooking Time: 1 hour
1 package pasta
1 cup frozen or canned green peas
2 cups cherry tomatoes
1 chili pepper, chopped (optional)
1 handful basil leaves
Olive oil
1 package Tnuva Bulgarian Feta Light Cheese, crumbled
Sea salt, according to taste
Ground black pepper, according to taste
1. Heat a griddle on the stovetop. Once the pan is hot, add a little olive oil and place the tomatoes. Reduce to a low flame and roast the tomatoes until they are browned. Alternatively, preheat the oven to 300 degrees Fahrenheit and place the tomatoes on a tray lined with baking paper. Roast the tomatoes in the oven for about one hour.
2. If using frozen peas, prepare according to package and let them cool. If using canned peas, remove them from the can and drain out the excess water.
3. Prepare the pasta. Once cooked, drain well and return to the pot.
4. Mix the peas, tomatoes and chili peppers onto the pasta. Season with salt and pepper.
5. Prior to serving, drizzle a little olive oil onto the pasta and top with the fresh basil and fresh Bulgarian cheese.
