Light-as-air Skinny Cheesecake

Ingredients:
4 eggs
4 tablespoons sugar
2 containers Tnuva Quark Cream Soft Cheese 5%
5 tablespoons flour
1 teaspoon vanilla flavoring
1 teaspoon lemon zest (optional)
Instructions:
1. Preheat oven to 325 ⁰F. Grease an 8” square pan.
2. Separate the eggs. In a medium bowl, mix the egg yolks with the cheese, vanilla and lemon zest, if using.
3. Beat egg whites at high speed for one minute, until frothy. Add the sugar gradually and continue beating until stiff.
4. Fold the cheese mixture into the beaten egg whites just until incorporated.
5. Fold in the flour and mix just until incorporated. Pour batter into greased pan and smooth the top. Bake for 38-40 minutes or until golden and firm. Remove from oven and cool at room temperature for an hour. Refrigerate for 3 hours and serve chilled.
