Cheesy Cauliflower Pancakes

1 small cauliflower, chopped
½ cup Tnuva Mozzarella or Edam Cheese, grated
2 eggs
1 tablespoon fresh dill or parsley, chopped
Salt and pepper to taste
1. Preheat the oven to 335°F and line a baking tray with parchment paper.
2. Using a food processer, grind the cauliflower. Transfer the cauliflower onto the baking tray and toast in the oven for about 30 minutes. This should remove most of the water from the cauliflower.
3. Once the cauliflower is removed from the oven, turn the temperature to 350°F. Strain the cauliflower and squeeze out the extra water.
4. Line a large baking tray with parchment paper
5. In a large bowl, mix together the cauliflower with the eggs, cheese and herbs. Season with salt and pepper to taste.
6. To form each pancake, scoop out about 2 tablespoons of the batter mixture and assemble on the baking tray, allowing for about 1.5 inches of space between each pancake.
7. Bake for about 10 minutes until the pancakes are golden brown. Serve hot.
