Roasted Veggies au Gratin

Ingredients:
5 medium russet potatoes, scrubbed and sliced
1 medium Spanish onion, diced
½ pound basket cherry tomatoes
4 tablespoons virgin olive oil
Salt to taste
Grated white pepper
2 stalks celery, sliced on the diagonal
3 tablespoons fresh basil, shopped
4 cloves garlic, sliced
1/3 cup fresh parsley, chopped
7 ounces Tnuva Muenster cheese slices, cut into strips
Instructions:
1. Preheat oven to 375 ⁰F.
2. In a large bowl, combine all ingredients except for the cheese and toss together.
3. Transfer to a shallow baking pan, and cover with silver foil. Bake for an hour until soft.
4. Before serving, remove silver foil and sprinkle Muenster cheese on top of the vegetables. Place under the broiler for 2 minutes until browned. Serve immediately.
