Low-Fat GF Onion Quiche

Prep Time: 20 minutes

Ingredients:

4 onions, chopped
1 leek (white part only), sliced
1 bunch scallions, chopped
1 container Tnuva Quark Creamy Soft Cheese 5%
1 cup yogurt
2 slices Tnuva Edam Cheese, Light, cut into small pieces
2 tablespoons cornstarch/potato flour/almond flour

Instructions

1. Preheat oven to 375⁰F.
2. Put the onions, leek and white part of the scallions and steam in a large pot with 4 tablespoons of water, stirring constantly. Cook for 8 minutes until the onions are soft. Add more water to avoid burning the onions.
3. Transfer the onions to a bowl and let cool slightly. Add the rest of the ingredients and combine.
4. Pour into a greased baking pan.
5. Bake for 40 minutes until golden.
