Sweet Potato Galette with Goat Cheese

Ingredients:
1 package Maadanot Frozen Rolled Turkish Phyllo Dough
3 sweet potatoes, sliced thinly
1 Spanish onion, sliced thinly
1 package Tnuva Goat Cheese
2 tablespoons fresh thyme
3 tablespoons honey
4 tablespoons olive oil
Atlantic salt and freshly ground black pepper according to taste
¼ teaspoon ground chili
Beaten egg for brushing
Instructions
1. Open out the dough on a lightly floured surface. Trace two large circles and cut them out.
2. Preheat oven to 400⁰F.
3. Arrange slices of goat cheese all over the dough, topped with Spanish onion slices.
4. Arrange the sweet potato slices all around, and brush with olive oil. Sprinkle Atlantic salt, pepper, thyme and honey over the top.
5. Fold over the edge of the dough, and brush with beaten egg.
6. Repeat with the second dough circle.
7. Bake each galette for 20 minutes, or until the sweet potato is cooked through and the dough is golden and well-baked.
