Vegetable-Halomi Skewers

Prep Time: 20 minutes
Ingredients:
1 package Tnuva Halomi Cheese
3 zucchini, cut into cubes
1 eggplant, cut into cubes
1 red pepper cut into cubes
1 Spanish onion, cut into cubes
3 tablespoons olive oil
Salt and pepper to taste
Instructions
1. Preheat oven to 400⁰F. Line a baking pan with parchment paper.
2. Put all the vegetables in a bowl and sprinkle with olive oil.
3. Arrange the vegetables on the baking pan in a single layer, and sprinkle with salt. Roast for 30 minutes.
4. Prepare 9 skewers with roasted vegetables and pieces of Halomi.
5. Heat a very large skillet (it should have enough room to lay a skewer flat) with a small amount of oil. Place the skewers onto the skillet and cook about 2 minutes on each side, or until the Halomi is seared on the outside.
6. Serve with soy sauce or teriyaki sauce.
