Normandy Muffins

Ingredients:
½ a bag of frozen mixed vegetables (400 grams) of the Normandy variety with cauliflower, broccoli, and carrots
2 cups (about 200 grams) of chopped onion
2 tablespoons olive oil
Salt, ground black pepper
1 tablespoon fried onion chips, or onion soup powder
1 cup (250 grams) of any of Tnuva’s White Cheeses ( preferably a 3% one)
2 eggs
2 tablespoons of breadcrumbs
1 tablespoon of flour (preferably whole wheat)
1 teaspoon of baking powder
Oiled muffin pans
Instructions:
1) Preheat oven to medium heat (180 ° C). Heat the bag of frozen vegetables in the microwave for 5 minutes. Cut the larger florets of broccoli and cauliflower.
2) Heat the oil in a frying pan, and fry the onion until golden. Add the vegetable mixture and mix well. Add the spices and onion chips and stir for 2-3 minutes. Remove from heat and allow it to cool a little.
3) Add the remaining ingredients and stir. Taste and improve seasoning.
4) Pour the batter into the muffin tins and bake for 30-25 minutes until the muffins are golden. Serve hot.
