Antipasti Goat Cheese Pastry

1 package Tnuva Maadanot Frozen Rolled Puff Pastry Dough, thawed
1 small eggplant, sliced into rounds
2-3 red peppers, sliced
2-3 zucchini, sliced into rounds
¼ cup olive oil
Salt and pepper to taste
1 package Tnuva Goat Cheese


1. Preheat oven to 400 ⁰F. Line baking pans with parchment paper.
2. Arrange the vegetables on one of the baking pans and brush with olive oil. Season with salt and pepper.
3. Grill the vegetables until lightly brown, 8-10 minutes. Remove from oven and let cool. Reduce oven heat to 375 ⁰F.
4. Lightly flour a work surface. Open up the dough and divide in two. Using a sharp knife, draw a line all around the dough, about an inch from the edge. Put both pieces of dough on a baking pan. Spread 1/3 of the goat cheese on the bottom of the dough, for a very thin layer. Slice the rest of the goat cheese. Arrange the vegetables and cheese on the dough.
5. Bake for 20-25 minutes, until the vegetables and dough turn brown. Serve warm.
