For pie crust:
1. Preheat the oven to 350 degrees Fahrenheit.
2. Roll out the dough. Using a sharp knife, cut the dough into a circle that is slightly larger than the base of the round baking dish. Place the dough into the baking dish, and make sure that some of the dough rolls up onto the sides of the dish. Dough will shrink once baked.

For apple filling:
1. In a large pot over a hot stove, melt the butter with sugar and cinnamon, until the mixture begins to bubble.
2. Add the apples and cook for 15-20 minutes until tender and most of the liquid has evaporated. Set to cool.
For cheese filling:
1.Stir the cheese with sugar and vanilla, until fully blended. Gradually add the eggs, until the mixture is firm and mixed well.
Assembly:
1. Place the pecans over the cooled pie crust.
2. Evenly place the apples over the pecans and crust. Then, pour the cheese filling.
3. Bake for about one hour, until the cheesecake is firm and moist.
