Baked Potatoes with Cheesy Filling

Ingredients:

4 large potatoes
1 tablespoon olive oil
1/4 teaspoon each salt and pepper
Filling:
1 8-ounce container heavy cream
1 container Tnuva Quark Creamy Soft Cheese, 5% or 9%
2 spring onions, chopped
3 tablespoons Tnuva Butter, softened
2 cloves garlic, crushed
Salt and pepper to taste
3 slices Tnuva Muenster Cheese, cut into tiny pieces

Instructions:

1. Wash the potatoes well and place in a baking pan. Brush with olive oil and sprinkle with salt and pepper. Bake at 375 ºF for 45 minutes, until soft.
2. Melt the butter in a skillet. Add the onions and garlic and sautee for about 2 minutes. Remove from heat and add the cream and the Tnuva Quark cheese. Mix well.
3. Slice the potatoes in half lengthwise and remove about 1/4 of the inside. Place in a bowl and mash with a fork. Add the mashed potato to the skillet with the cheese mixture and mix well. Season with salt and pepper.
4. Refill the potatoes with the potato-cheese mixture. Sprinkle Muenster cheese on top. Put in the oven for another 10 minutes, until the cheese is bubbly.
