Cauliflower-Mushroom Quiche

3-4 matzos
1 cup milk

1 medium cauliflower, divided into florets
1 basket fresh mushrooms, sliced
1 tablespoon olive oil
1 8-ounce container heavy cream
4 eggs
5 slices Tnuva Edam cheese, cut into small pieces
Salt & pepper to taste


1. Preheat oven to 400 ⁰F. Wash the potatoes well. Slice each one thinly leaving them connected at the bottom.
2. Brush the potatoes with olive oil and sprinkle them with salt and pepper. Bake for 20 minutes or until soft.
3. Remove the potatoes from the oven. Reduce heat to 350 ⁰F.
4. In a small bowl, combine parsley with olive oil and brush on to the potatoes. Sprinkle the Edam cheese on top of the potatoes, making sure it gets in between the layers. Bake for another 5 minutes.
