Cheese-Filled Fried Matzo

10 matzos
3 potatoes
1 cup cottage cheese
2 tablespoons Tnuva Quark Creamy Soft Cheese 9%
7 ounces Tnuva Edam Cheese Slices, cut into small pieces
3.5 ounces Tnuva Feta crumbled
4 eggs beaten, with salt
oil for frying


1. Dip each matzah in water or milk for 30 seconds, 15 seconds on each side. Place on a towel and let rest for 25 minutes.
2. Cook the potatoes in salted water until soft. Drain and mash. Add the cheeses and mix well.
3. Cut the matzos in half. Place some of the filling on one end and roll up.
4. Dip into the beaten egg, and fry on both sides. Serve immediately.
