Cheesy Apple Cake

Cubed apples with a pampering cinnamon smell in a sponge with a buttery base and cream cheese. The graham cracker crumbs soak up the apple juice.

Preparation Time: 20 minutes

Requires a 30 x 11 cm pan

Ingredients:
2 big apples, peeled and sliced into cubes of approximately 1.5 cm
2 tsp. lemon juice
75 grams of Tnuva Butter at room temperature
225 grams Tnuva Original Cheese spread
1 cup sugar
2 packets of vanilla sugar
Lemon zest from a medium-sized lemon
2 large eggs, whisked
11/2 self-rising flour
A dash of salt
50 grams powdered sugar
1 tsp. cornflower
½ tsp. ground cinnamon
½ cup graham crackers, crushed

Instructions:
1.Place the cubed apples in a bowl, drizzle with lemon juice and stir. Grease the pan and line with baking parchment. Preheat the oven to 170 degrees Celsius.
2.In a large mixing bowl, blend together the butter, cream cheese, sugar, vanilla sugar and lemon zest for about 4-5 minutes, until the mixture is smooth. Slowly add the eggs, and mix after each addition. Add the flour and salt and mix until the mixture is just smooth.
3.In a separate bowl, mix together the powdered sugar, cornflower, and cinnamon, and sprinkle on top of the apple. Mix the apples well, until all the apples are equally covered with the mixture. Add the apples to the batter, together with ¾ of the graham cracker crumbs; carefully fold them into the batter with a spatula.
4.Transfer the batter to the pan, and smooth the top. Sprinkle the remaining graham cracker crumbs on top. Bake in the bottom third of the oven for 50-55 min., until the cake browns and a toothpick stuck in the middle comes out dry.
