Cheesy Surprise Muffins

2 cartons of Tnuva’s Quark Creamy Soft Cheese 5% (500 grams)

2/3 of Tnuva’s Cheddar Loaf Cheese 9%, grated

1/3 cup olive oil

1 egg

4-5 garlic cloves

A handful of fresh oregano leaves

1/2 tsp. ground black pepper

A handful of dried onion chips or 2 dried onions chopped and fried

2 tbs. sweet paprika

3/4 cup + 2 tablespoons bread flour

3/4 cup + 2 tablespoons whole wheat flour

1 tbs. + 1 tsp. baking powder

1 cup raisins

1/2 cup chopped walnuts


For garnishing:

1 whisked egg

A handful of chopped nuts

Preheat the oven to 340 degrees Fahrenheit and line a muffin pan with 12 muffin liners. In a large bowl mix together the cheeses, the oil, the spices, and all of the other ingredients, aside from the flours and baking powder. Then, add the flours and baking powder until the mixture is an even texture. Steer clear of dense, heavy muffins by not overmixing the batter.
Use two spoons to separate the mixture evenly into each of the muffin liners. Coat each muffin lightly with the whisked egg and scatter chopped nuts above.
Bake for 20-25 min. or until the muffins are fluffy, golden, and fragrant.
Set to cool at room temperature and serve.
