Cheesy Zucchini Boats With Olive Tapenade

1 jar of Olivia’s Olive Tapenade (Black & Green Olives Spread)
2 zucchini, halved
1 pack of haloumi cheese (about 0.5 lb)
1 bag of baby spinach leaves
1 sweet pepper, cut into small cubes
1 teaspoon fresh thyme, finely chopped
Salt, black pepper

1. Scoop the seeds and the pulp out of the halved zucchinis to create “boats”.
2. In a bowl, mix Olive Tapenade, baby spinach, sweet pepper, and thyme.
3. Fill the zucchini boats with the mixture and place sliced haloumi cheese on top.
4. Bake for about 10 minutes in an oven preheated to 350 °F.
5. Serve hot.
