Classic Carrot Cake with Cheese Frosting

Ingredients:
2 eggs
¾ cup Demerara sugar
1 cup orange juice
1 tablespoon vanilla extract
½ cup oil
1 ½ cups grated carrot
2 1/3 cups flour
2 teaspoons baking powder
1 teaspoon cinnamon
1 cup coarsely chopped nuts, divided
Frosting:
1 container Tnuva Premium Cheese Spread, original flavor
6 tablespoons powdered sugar
1 ½ tablespoons butter
½ teaspoon cinnamon
3 tablespoons ground nuts for sprinkling on top
Instructions:
1. Preheat oven to 350⁰F. In a large bowl, beat the eggs, sugar, orange juice, vanilla extract, oil and grated carrot.
2. Add the flour, baking powder and cinnamon. Mix well. Add half of the nuts and mix just until incorporated. Do not overmix.
3. Pour the batter into a loaf pan. Sprinkle the rest of the nuts on top. Bake for 50-65 minutes, or until a tester inserted in the center comes out clean. Remove from oven and cool.
4. Beat all the frosting ingredients together until smooth.
5. Spread the frosting over the completely cooled cake. Garnish with ground nuts.
