Coconut Cinnamon Buns

Ingredients:

Dough:
1 1/4 cups Tnuva Alternative Coconut Almond Drink, at room temperature
1/2 cup sugar
1 tablespoon dry yeast
1/3 cup coconut oil, melted
3 1/2 cups flour
1/4 teaspoon salt
Filling:
3 tablespoons coconut oil, melted for brushing the dough
1/4 cup Demerara sugar
1/4 cup desiccated coconut
2 teaspoons cinnamon
Syrup:
1/3 cup water
1/4 cup + 2 tablespoons sugar

Instructions:

1. Prepare the dough: In a mixer bowl, mix the coconut almond drink with the sugar and yeast using the dough hook.
2. Add the coconut oil and flour, and knead for 5 minutes until you have a sticky dough.
3. Add the salt and knead for another 20 seconds. Form the dough into a ball and transfer to a greased bowl. Cover and let rest in a warm place for about an hour, or until the dough is double in bulk.
4. Transfer the dough to a floured surface and punch down. Roll out to a 14″ x 18″ rectangle.
5. Brush the dough with coconut oil. Combine the sugar, coconut and cinnamon and sprinkle all around.
6. Roll up the dough from the long side. Slice into 8 even pieces.
7. Preheat the oven to 350ºF.
8. Grease an 8″ round pan and arrange the slices tightly together, spiral side up, with one in the center and the others all around. Let rise for 20 minutes.
9. Cover with foil and bake for 20 minutes or until fully baked.
10. Meanwhile, prepare the syrup: Put the water and sugar in a small saucepan. Bring to a boil and cook for 3 minutes. Remove from heat.
11. When the buns are ready, remove from the oven and brush with the syrup.
