Creamy Green Pea Soup

Serves: 3-4 portions
Ingredients for the soup:
A bag of frozen green peas
4 glasses of water
3 tablespoons fresh thyme
1 large white onion, chopped
3 table spoons of Tnuva butter
3 tablespoons of cooking cream, 15% fat
For croutons:
2 slices of white bread cut into small cubes
4 tablespoons olive oil
1 teaspoon of garlic powder
1/2 teaspoon sweet paprika
For decoration:
Fresh mint leaves
1 container of Tnuva Quark Creamy Soft Cheese, 3% fat
1 teaspoon salt
1 teaspoon black pepper
Instructions:
1. In the saucepan, melt butter and add chopped onion, sauté for about 5 minutes, till onion’s translucent.
2. Add a bag of peas, salt, pepper, thyme and 4 cups of water. Bring to a boil, lower the flame and cook for about 20 minutes.
3. Using a hand blender or a food processor, blend the soup until creamy and smooth.
4. Add the cooking cream, stir and cook for additional 5 minutes on low flame.
5. While the soup is boiling, make croutons: fry bread cubes with garlic powder and paprika in olive oil. Stir the bread for about 5 minutes until browned. Remove from heat.
6. Serve the soup in individual bowls. Top each one with a spoon of Tnuva quark cheese, croutons and chopped mint leaves.
