Creamy Vegetable Pasta

Ingredients:

1 14-ounce package Penne pasta
2 tablespoons olive oil
4 tablespoons Tnuva Premium Cheese Spread, Original Flavor
1 zucchini, chopped
1 small bag frozen broccoli, thawed
½ cup fresh spinach leaves
2 tablespoons pesto
2 slices Tnuva Muenster Cheese, cut into small pieces
2 scallions, sliced

Instructions:

1. Cook the pasta according to package directions. Set aside and reserve ½ cup of the pasta cooking liquid.
2. Heat the olive oil in a skillet. Add the zucchini and stir fry until slightly browned. Add the broccoli and spinach and cook until the vegetables are soft.
3. Add the Tnuva Premium Cheese, the pasta cooking water and the pesto to the vegetables. Stir constantly and cook until all the ingredients are incorporated and you have a smooth sauce.
4. Add the cooked pasta, the Tnuva Muenster cheese and mix well. Top with the scallions and serve immediately.
