Crème Brulee with Alternative Oat Milk

Ingredients:
3 cups Alternative Barista Oat Milk
1/2 sugar
1 teaspoon vanilla extract
1 teaspoon instant coffee granules
2 ½ tablespoons cornstarch
¼ cup water
Glaze:
6-8 tablespoons Demerara sugar
Instructions:
1. Put the oat milk, sugar, vanilla and coffee in a saucepan and simmer over low heat, stirring constantly until the coffee and sugar are dissolved, about 3-4 minutes.
2. In a glass, whisk the cornstarch and water until smooth. Pour into the saucepan and continue cooking, whisking constantly for about 2 minutes, until slightly thickened.
3. Pour into 4 ramekins. Let cool at room temperature for 5 minutes. Chill in the freezer for 30 minutes, or in the fridge for 3 hours.
4. Before serving, sprinkle sugar on top. Carmelize using a torch or put under the broiler. Serve immediately.
