Deluxe Mini-Pizzas

Makes three styles of mini-pizzas

1 package of Frozen Rolled Short Dough For Savory Pastries, defrosted, rolled out, and cut into into 6-inch circles
Pizza 1
1 jar pizza sauce
1 cup shredded Tnuva Cheddar Cheese
1 red onion, finely chopped
1 red pepper, cut into strips
1 yellow pepper, cut into strips
½ cup cauliflower florets
1 fennel, thinly cut
Pizza 2
1 container Tnuva Goat Cheese, cut into circles
1 package Tnuva Parmesan Cheese, grated
1 package Tnuva Mozzarella Cheese, Shredded
1 red pepper, cut into strips
10 black olives
5 sun-dried tomatoes, chopped
Zaatar spice mix
Pizza 3
1 container pizza sauce
1 zucchini, chopped into small pieces
1 handful arugula leaves
50 grams of Tnuva Parmesan Cheese, grated
Olive oil
To prepare pizza 1
1. Arrange the onion, peppers, fennels and cauliflower on a baking sheet lined with baking paper. Drizzle with olive oil and salt and roast for about 15 minutes on 400 degrees Fahrenheit.
2. Spread 2 tablespoons of sauce on top of 2 of the pastry circles. Top with vegetables and cheddar cheese.
3. Bake for another 20 minutes.
To prepare pizza 2
1. Roast the peppers in the oven for 10 minutes.
2. Sprinkle cheeses on the pastry circles. Bake for 20 minutes.
3. Remove the pizzas from the oven and top with olives, sun-dried tomatoes and roasted red peppers. Sprinkle with zaatar.
To prepare pizza 3
1. Toast zucchini pieces in the oven with a little olive oil and salt for about 10 minutes.
2. Spread 2 tablespoons of sauce on 2 pastry circles dough and arrange roasted zucchini. Bake for another 20 minutes.
3. In a small bowl, season the arugula with olive oil and salt. Generously add grated parmesan. Serve on atop of the pizzas.
