Double Cheese Latkes

1 container Tnuva Quark Creamy Soft Cheese 5%
2 ounces Tnuva Edam Cheese slices, cut into small pieces
1 egg
½ cup flour
¼ teaspoon baking powder
Salt and pepper to taste
Optional additions: chopped olives, chopped tomatoes, pesto
2 tablespoons oil for frying


1. In a medium bowl, combine all the ingredients together. Mix until incorporated.
2. Add any additions you like. Mix.
3. Heat the oil in a non-stick pan. Drop spoonfuls of the batter onto the pan. Cook for about 2 minutes and turn over. Cook for another minute.

Variation: Instead of frying, you can bake the latkes. Preheat oven to 350 ⁰F. Line a baking pan with parchment paper and brush with a little oil. Drop the batter onto the paper by spoonfuls. Brush a little more oil on top of the latkes. Bake for about 15 minutes until golden brown on both sides. Serve immediately.
