Double Tomato-Cheese Salad

4 tomatoes, quartered
1 large kohlrabi, diced
2/3 cup extra virgin olive oil
1 teaspoon coarse salt
¼ teaspoon freshly ground black pepper
1 package arugula
10 ounces cherry tomatoes, halved
¼ cup fresh basil
1 ½ tablespoons balsamic vinegar
1 package Tnuva Crumbled Sheep Feta
2 slices Tnuva Swiss Cheese, cut into strips
Salt & pepper to taste


1. Preheat oven to “broil.”
2. Line a baking pan with parchment paper. Put the kohlrabi and quartered tomatoes in the pan. Brush with half of the olive oil and sprinkle with coarse salt and ground pepper.
3. Broil for 4-5 minutes until brown. Remove from the oven and let cool.
4. To assemble: In a large bowl, arrange the arugula, cherry tomatoes, basil, and the roast tomatoes and kohlrabi. Pour the rest of the olive oil and the balsamic vinegar on top. Season with salt and pepper and toss. Top with the Feta and Swiss cheeses and serve.
