Easy-as-Pie Apple-Honey Cake for Rosh HaShanah

Ingredients:
3 ounces Tnuva Butter, softened
3 tablespoons oil
¾ cup Demerera sugar
2 eggs
2/3 cup honey
½ cup yogurt
1 ½ cups flour
¼ teaspoon baking powder
1 large Granny Smith apple, diced
Confectionary sugar for sprinkling
Instructions
1. Preheat oven to 350⁰F.
2. Grease a 12-inch loaf pan with butter or oil.
3. In a medium bowl, combine the butter, oil and Demerara sugar.
4. Add the eggs and beat until fluffy.
5. Add the honey and the yogurt and mix well.
6. Add the diced apple and mix just until incorporated. Pour into the greased loaf pan.
7. Bake for about 40 minutes until a tester comes out clean. Let cool completely.
8. Sprinkle with confectionary sugar and serve.
