Espresso Mousse with Caramel Topping

Ingredients:
1 package ladyfingers
16 ounces heavy cream
1 container Tnuva Premium Cheese Spread, Original flavor
1 cup concentrated espresso
3 ounces powdered sugar
1 teaspoon instant coffee dissolved in 1 cup warm water
Caramel:
5 ounces sugar
2 tablespoons water
Pinch salt
1 cup heavy cream
1 ½ tablespoons butter

Instructions:
1. Prepare the caramel: Heat the heavy cream and set aside.
2. Heat the sugar in a skillet on a low flame until the sugar starts to turn amber brown. Using a wooden spoon, add the warm cream, stirring constantly until combined. Remove from heat and add salt. Stir well and let cool completely.
3. Beat the cream with the powdered sugar until soft peaks form. Add the cheese and the espresso and beat until combined.
4. Dip the ladyfingers into the instant coffee. Cut into thirds and place on the bottom of decorate mousse cups. Cover with espresso mousse. Repeat with another layer of ladyfingers and mousse. Top with caramel. Serve chilled.
