Flourless Tomato-Feta ‘Pancakes’

Ingredients:
2 eggs
3 large tomatoes
3 ounces Tnuva Feta Cheese, crumbled
1 tablespoon fresh herbs, chopped
Salt and pepper to taste
Oil for frying

Instructions:
1. Slice the tomatoes and remove the insides so that you are left with a round frame.
2. Chop the insides of the tomatoes and combine with the eggs, cheese, herbs and seasoning.
3. Heat the oil in a frying pan. Place the tomato rings on the frying pan and fill with the mixture. Cover and cook for 3 minutes until set. Serve immediately.
