Fried Cheese And Avocado Salad

Ingredients:
For the salad:
2-3 types of crispy lettuce leaves
1 bunch arugula
20 small basil leaves
20 fresh spinach leaves
2 ripe avocados peeled and diced
3.5 oz. roasted or fried walnuts
For the cheese:
1 container Tnuva Quark Creamy Soft Cheese
1 cup flour
salt, fresh ground black pepper
1 teaspoon sweet paprika
2 teaspoons chopped thyme leaves
2 eggs (scrambled)
oil for half deep frying
For the dressing:
1 teaspoon high quality mustard
salt, fresh ground black pepper
1 teaspoon sugar
1 teaspoon of fresh lemon juice
1/3 cup balsamic vinegar or wine vinegar
3/4 cup  olive oil

Instructions:
1. Mix all the greens and avocado slices together in a large bowl. Then place all the ingredients for the dressing in a jar and shake well.
2. Spoon the cheese into thin slices. In a small bowl, mix the flour, spices and thyme leaves. Dip the cheese slices in flour mixture then in eggs and again in flour.
3. Heat oil for half deep fry. Fry cheese from both sides until brown.
4. Place the cheeses slices on the salad, top with walnuts and toss with the dressing.
