GF Broccoli Rice Noodle Salad with Pecans and Feta

16 ounce package frozen broccoli, thawed
7 ounces Light Feta Cheese, diced
16 ounce package rice noodles
¼ cup pecans or peanuts, chopped
1 scallion, sliced
Sesame seeds
3 tablespoons lime juice
1 tablespoon peanut butter
1 teaspoon honey
¼ cup oil
3 cloves garlic, crushed
1 tablespoon grated ginger
2 tablespoons GF soy sauce
½ teaspoon sesame oil

1. Put all dressing ingredients in a bowl and beat well. Set aside.
2. Cooked the thawed broccoli in boiling water for two minutes. Drain.
3. Cook rice noodles according to package directions. Drain and add to the bowl with the dressing.
4. Add the broccoli, Feta and pecans and toss.
5. Decorate with scallion slices and sesame seeds. Serve immediately.
