GF Pan-Fried Pizza

Yield: 2 pan-fried pizzas

Ingredients:

Dough:
1 cup chickpea flour
1 cup cornmeal
½ teaspoon salt
½ teaspoon baking soda
1 cup water
1 tablespoon vinegar
½ cup Tnuva Quark Cream Soft Cheese, 5% or 9%

Topping:
1 jar pizza sauce
5 Tnuva Edam Cheese Slices, cut into small pieces
1 red pepper sliced
¼ cup green olives, pitted

4 tablespoons oil for frying

Instructions:

1. Prepare the crust: In a large bowl, combine the chickpea flour, cornmeal, salt and baking soda and mix well. Add the water, vinegar and cheese and combine using a fork.
2. Heat 1 tablespoon oil in a large frying pan. Transfer half the dough to the frying pan, pressing down so that it’s flat. Sprinkle another tablespoon of oil on the surface of the dough and spread it around. Cover the frying pan and cook for about 3 minutes. Reduce heat and cook for an additional 5 minutes, until the bottom is brown.
3. Turn the crust out onto the lid of the frying pan and turn over. Add another tablespoon of oil to the frying pan and fry the other side of the crust. Spread the cooked top of the crust with half the toppings: pizza sauce, Edam cheese, red pepper and olives. Cover and cook for 5 minutes, until the bottom is brown and the cheese is melted. Repeat with the other half of the dough.
4. Serve immediately.
