Gluten-Free Alternative Carrot Cake

Ingredients:

2 cups ground almonds
2 cup finely grated carrots
Pinch salt
¾ cup sugar
4 eggs
1 container Tnuva Alternative Almond Dessert, Hazelnut flavored
¼ cup oil
Sliced almonds for decorating

Instructions:

1. Preheat oven to 325⁰F. Grease a loaf pan.
2. In a bowl, combine the ground almonds with the carrots and the salt.
3. In a separate bowl, beat the sugar with the eggs for about a minute, until light colored.
4. Add the almond dessert and the oil and mix well. Add the ground almond mixture to the egg mixture and mix well.
5. Transfer the batter to the greased pan and sprinkle sliced almonds on top. Bake for 40 minutes or until a tester inserted into the center comes out clean.
6. Cool completely before serving.
