Gluten-Free Alternative Marble Cake

Ingredients:

½ cup ground almonds
¼ cup cornstarch or potato flour
¾ cup ground coconut
½ teaspoon baking powder
½ teaspoon baking soda
Pinch salt
½ cup oil
2/3 cup sugar
1 teaspoon vanilla extract
2 eggs, beaten
¼ cup Tnuva Alternative Almond Drink
2 tablespoons vinegar

For marble effect:
3 ½ ounces dark chocolate
¼ cup Tnuva Alternative Almond Drink

Instructions:

1. Preheat oven to 375⁰F. Grease a loaf pan.
2. Put the ground almonds, potato flour, coconut, baking powder, baking soda and salt in a bowl. Mix well. Add the oil, sugar, vanilla, eggs, almond drink and vinegar and mix well.
3. Melt the chocolate and cool slightly. Add 4 tablespoons of the batter and mix well. Add the remaining ¼ cup almond drink and mix well. Set aside.
4. Pour the batter into the greased loaf pan. Pour the chocolate batter on top. Swirl it into the cake using a knife for a marble effect. Bake for 35 minutes until a tester inserted into the center comes out clean.
5. Cool completely before serving.
