Gluten-Free Mini Herb Doughnuts

Ingredients:

½ cup tapioca or rice flour
½ cup cornmeal
½ cup chickpea flour
1 teaspoon baking powder
½ teaspoon baking soda
Dash nutmeg
¼ teaspoon each salt and white pepper
1 beaten egg
¾ cup Greek yogurt
½ cup water
1 tablespoon vinegar
¼ cup finely chopped herbs (parsley, dill, basil, etc.)
3.5 ounces Tnuva Feta Cheese, cut into cubes
Oil for frying

Instructions:

1. In a large bowl, combine flours, baking powder, baking soda, and spices. Add egg, yogurt, water and vinegar and knead together. Add herbs and mix until incorporated. Cover with a plastic bag and let rest for half an hour.
2. Heat oil in a pot. Scoop dough using an ice-cream scoop. Press a cube of Feta in the middle and cover with more dough. Drop the scooped dough into the hot oil.
3. Fry for 3-4 minutes until doughnuts are puffy and golden. Repeat with the rest of the dough and the cheese. Remove doughnuts with a slotted spoon and drain on absorbent paper. Serve immediately.
