Goat Cheese Salad with Raspberry Vinaigrette

Yield: 8 servings

Prep Time: 30 minutes

10 ounces Tnuva Goat Cheese, sliced
2 heads romaine lettuce, thinly sliced
1 small red onion, sliced into half-moons
1 cup terra chips or your favorite crouton
Raspberry Dressing:
1 small shallot, peeled
6 tablespoons raspberry preserves
¼ cup balsamic vinegar
23 cup olive oil
Salt and ground black pepper, to taste

1. Prepare the dressing: Place shallot into the bowl of a food processor fitted with the “S” blade; process to mince finely. Add preserves and vinegar.
2. While machine is running, add the oil slowly, in a steady stream. Add salt and pepper to taste.
3. Prepare the salad: Combine Tnuva Goat Cheese, lettuce, onions and croutons in a large bowl.
4. Just before serving, drizzle with dressing. Toss salad to combine.
