Gourmet Sweet Potato Latkes

4 medium sweet potatoes
Salt and coarsely ground black pepper to taste
5 ounces Tnuva Feta Cheese
4 slices Tnuva Edam Cheese, cut into small pieces
½ cup chopped chives
2 eggs
2/3 cup bread crumbs
1 tablespoon soy sauce

Bread crumbs

½ cup corn oil
4 ounces butter


1. Put the sweet potatoes in a pot filled with water and bring to a boil. Cook until soft. Drain cooking water and leave in a colander to drain for another hour. Transfer to a bowl and mash until smooth.
2. Add the rest of the ingredients and mix well. Chill in the fridge for an hour.
3. Heat the corn oil and the butter in a frying pan. Using wet hands, form latkes and coat with bread crumbs. Fry latkes on both sides until golden.
4. Serve hot with dollops of Tnuva Quark Creamy Soft Cheese 5%.
