Greek Whoopie Pies

Perfect for adults and children alike, these soft cookie sandwiches are covered on chocolate, and filled with strawberries and yogurt.

Serves: 12-15
Ingredients:
For the soft cookies:
2 eggs
3/4 cup of sugar
Pinch of salt
50 grams of melted Tnuva USA Butter
1 teaspoon of grated orange peel or lemon
1/2 cup of goat’s yogurt drink
1.5 of cup flour
1 teaspoon of baking powder
For the cream:
1 cup of (225 grams) Greek yogurt based cream cheese
1 cup of chopped strawberries
4 tablespoons of powdered sugar
For the coating:
100 grams of dark chocolate
2 Tbs of Tnuva Butter
For decoration: 3-4 strawberries cut into quarters
Instructions:
1. Whisk together, sugar and salt in a bowl. Add butter and whisk until airy. Add yogurt and whisk. Add flour and whisk until smooth.
2. Place paper crowns (cuffs) for baking in a baking pan and heat the oven to 200 degrees. · Take a teaspoonful of the dough and place in each sheet of paper and bake for 12-15 minutes until the cookies turn brown. Cool completely and remove from the paper.
3. Melt chocolate and butter into a smooth cream. Spread half the cream on half the cookies and place on a cooling net.
4. Mix the ingredients of the yogurt cream with a fork. Mash the strawberries slightly. Place a large spoon over the cookies, which are not coated with cream and cover with cookies, like a sandwich. Garnish with strawberries cut into quarters and refrigerate until serving.
