Heavenly Chocolate Coconut Truffles

Ingredients:

1 cup ground coconut + more for coating
¾ cup Tnuva Alternative Coconut Almond milk
2 tablespoons liquid honey
1 Tnuva Chocolate Pudding
1 teaspoon vanilla extract
5 ounces good quality dark chocolate, chopped
¾ cup Tnuva Quark Creamy Soft Cheese 5%

Instructions:

1. In a medium bowl, combine the coconut, coconut almond milk, honey, pudding and vanilla extract. Chill in the fridge for about an hour.
2. Melt the chocolate in a microwave or double boiler. Add the cheese and mix well. Pour over the coconut and mix well. Put back in the fridge to chill for another hour.
3. Remove from the fridge and form truffles about the size of a golf ball. Roll in coconut to coat evenly. Put in a covered container and keep in the fridge.
4. Remove from the fridge 5 minutes before serving.
