Herb Salad with Feta and Pomegranate

Prep Time: 40 minutes
Ingredients:
1 bunch flat leaf parsley, chopped
1 bunch cilantro, chopped
1 bunch mint, chopped
4-5 scallions, sliced
1 ½ cups pomegranate arils
7 ounces Tnuva Feta Cheese, crumbled
Dressing:
2 tablespoons mustard
6 tablespoons olive oil
2 teaspoons white wine vinegar
2 teaspoons honey
5 teaspoons water
Salt and pepper to taste
Instructions
1. Put the herbs and scallions in a pretty serving dish and toss.
2. Put the pomegranate and Feta on top.
3. Put all the dressing ingredients in a jar with a tight-fitting lid and shake well.
4. Pour the dressing over the salad just before serving.
