Lentil Bulgur Salad with Feta

Level: Easy

Ingredients:

1 cup medium bulgur, rinsed
1 ½ cups boiling water
½ teaspoon salt
1 cup cooked brown lentils
½ cup green onions, sliced
½ cup fresh parsley, chopped
3 dried apricots or a handful of craisins
5 ounces Tnuva Sheeps’ Milk Feta, cut into cubes
¼ cup olive oil
1/3 cup lemon juice
Salt and pepper to taste

Instructions:

1. Put the bulgur in a bowl with the boiling water and the salt. Sir, cover and let sit for about 15 minutes until the grains are soft. Fluff with a fork.
2. Combine the bulgur with the rest of the ingredients and toss gently.
3. Correct seasoning and serve.
