Light Broccoli Feta Frittata

Ingredients:

½ cup frozen mini broccoli florets, thawed
1 basket button mushrooms, quartered
1 small onion, diced
5 eggs
¼ cup milk
Salt & pepper to taste
½ cup Tnuva Light Feta Cheese, diced

Instructions:

1. Heat the oven to 390⁰F and line a baking pan with parchment paper. Bake the broccoli, mushrooms and onion for 25 minutes. Let cool.
2. Combine the vegetables with the rest of the ingredients except the Feta.
3. Pour into a greased ovenproof skillet. Sprinkle the Feta on top.
4. Cook over medium heat until the edges are brown.
5. Turn the oven temperature down to 350⁰F. Transfer the skillet to the oven and bake for about 25 minutes or until set.
