Low-Fat Feta Corn Fritters

Yield: 15-17 fritters

Ingredients:
16 ounces frozen corn
Salt to taste
1 tablespoon olive oil
1 package Tnuva Light Feta, crumbled
2 eggs
½ cup quick-cooking oatmeal
5 tablespoons flour + ¼ teaspoon baking powder

Instructions:
1. Preheat oven to 350⁰F. Grease two baking sheets.
2. Cook corn for about 4 minutes or until soft. Drain.
3. Transfer corn to a bowl. Mix with salt and oil.
4. Blend the Feta in a food processor with the eggs until smooth. Add to the corn and mix well.
5. Combine the oatmeal with the flour. Add to the corn mixture and mix well. Drop by spoonfuls onto the greased baking sheets.
6. Bake for 15 minutes. Remove from oven and turn over. Bake for another 10 minutes.
7. Cool and serve.
