Mac and Cheese with Tomatoes

Prep time: 50 minutes

Serves:4-6 (In a mid-sized Pyrex)

1 package penne pasta
¼ package Tnuva Unsalted Butter
3 tablespoons white flour
2 1/2 cups whole milk
1/4 teaspoon nutmeg
3-4 leaves of thyme
Salt and pepper to taste
10 oz grated Tnuva Edam Cheese
5 oz Tnuva Shredded Pizza Cheese
1-2 tomatoes chopped into small cubes
4 tablespoons bread crumbs

1. Cook the pasta according to the manufacturer’s instructions, strain and set aside until the sauce is ready.
2. Preheat oven to 350 ⁰F.
3. In a medium skillet, melt butter. Add flour and mix well with a wooden spoon.
4. Gradually add the milk, and continue to cook as you stir until it becomes creamy and slightly thick sauce is obtained.
5. Season with nutmeg, thyme, salt and pepper and stir.
6. Add the cheese and stir well.
7. Add in the cooked pasta and tomato cubes and stir until uniform.
8. Transfer the mixture to a well-greased pan and sprinkle over breadcrumbs in a thin layer.
9. Bake for 30-35 minutes until the cheese is bubbling and the top of the layer of pasta is golden.
