Matza Brei Pizza

2 matzahs
1 egg, beaten
Salt to taste
1 tablespoon oil
5 tablespoons tomato paste
Garlic powder, oregano, chili powder, to taste
4 slices Tnuva Edam cheese, cut into small pieces
1 ounce Tnuva Feta cheese, crumbled

Pizza toppings: olives, onions, mushrooms, corn (kitniyot), etc.


1. Wet the matzahs with some water and then break into small pieces in a bowl. Add the egg and salt and mix together.
2. Heat the oil in a frying pan and add the matzahs. Fry on one side until golden, and then turn over and fry on the other side. Transfer to an ovenproof plate.
3. Spread the matzah pancake with tomato paste and sprinkle spices on top. Add cheeses and desired toppings.
4. Place under the broiler for about 10 minutes or until cheese is bubbly.
