Mexican-Style Latkes with Cheese Dip

Ingredients:

Latkes:
12 Tnuva Edam Cheese Slices, cut into small pieces
1 container Tnuva Quark Creamy Soft Cheese, 5%
3 scallions, finely chopped
1 Spanish onion, finely chopped
1 red bell pepper, finely diced
1 green bell pepper, finely diced
¾ cup flour
1/8 teaspoon baking powder
2 eggs
½ cup chopped cilantro
½ jalapeno pepper, finely diced
1 cup frozen corn kernels, thawed
Oil for frying
Cheese Dip:
1 container Tnuva Premium Cheese Spread, Original Flavor
1 avocado
¼ cup chopped cilantro
Juice from 1 lemon
1 teaspoon salt
1 clove garlic, crushed
Chili pepper and finely chopped Spanish onion for garnish

Instructions

1. Combine all the ingredients for the latkes in a large bowl.
2. Heat the oil in a large skillet. Drop batter by spoonfuls and fry patties on both sides.
3. Put all the dip ingredients in a food processor and blend until smooth.
4. Transfer dip to a serving bowl and decorate with the chili pepper and chopped onion.
5. Serve with the freshly fried latkes.
