Microwave Individual Cheesecakes

Ingredients:
Crust:
10 tea biscuits or vanilla cookies
4 tablespoons butter
Filling:
1 container Tnuva Quark Creamy Soft Cheese, 5%
1 egg
3 tablespoons sugar
2 scant tablespoons cornstarch
1 teaspoon vanilla extract
Instructions:
1. Crush cookies until they are fine crumbs. Melt butter in the microwave.
2. Combine the crumbs with the butter and press into 2 microwave proof ramekins.
3. In a separate bowl, combine all filling ingredients and mix well until smooth.
4. Pour the filling into the 2 ramekins. Cook each cheesecake separately for about a minute and a half. The edges should be firm but the center should be soft. If necessary, return to the microwave for another few seconds.
5. Let cool. Chill in the fridge for at least 4 hours. Serve with fresh fruit or pie filling.
